Cake Baked with Love

I have been wanting to bake this kind of design swiss roll when the Japanese cake book was newly launched in 2011. This kind of design swiss roll was very popular since the book 1 was launched. Many bakers start baking them with different designs.

In year 2011, I purchased the book 1 & when the book 2 was launched in year 2012, I purchased it too. I browsed through the books again and again over the years, without the courage to bake a swiss roll again. My 1st attempt swiss rolls years back were too dry and since then, I never bake swiss roll again.

I was pretty much shut off from baking for the past few months. Have been planning to bake a cake for my hubby this December since last month. I went through the cake books & I had a hard time understanding the steps in chinese. No choice but to spend a day to translate the chinese text recipe into english. Finally understand the whole making procedures while I am translating them into english as I read through the chinese text again and again to ensure I didn't get the steps wrong.

After I got the recipe translated into english, I started to search for Doraemon designs online. Shortlisted a few and finally decided on this Doraemon happy face as I want a simple design so that the swiss roll will look neat and clean. Not too messy with too many designs.

I was in a very excited mood while making this swiss roll, especially during the designing part. The whole process is actually very tiring and troublesome. I need to use 2 electric mixers and 1 hand mixer just to make the egg white batters and egg yolk batter respectively. Things got really messy during the rolling up of the swiss roll. I did not use the standard swiss roll pan size as I didn't buy one. My swiss roll is not of the ideal thickness for a nice rolled-up swiss roll. I need to ensure I got the Doraemon face up nicely & I'm glad it does. However, I rolled and unrolled the swiss roll a couple of times to get a nice rolled up swiss roll, and this resulted in a fine crack on the Doraemon's mouth. Luckily, the sponge was very soft and easy to handle and only a fine crack was seen. Unlike some swiss roll recipes where the sponge cakes will crack immediately while rolling up. 

I was in an extremely happy mood after baking this Doraemon swiss roll. I love this Doraemon swiss roll. Looking at the happy Doraemon, my heart smiles too and I was feeling so happy the whole day, despite feeling tired after the baking & washing up session.

I was so glad that I had finally overcome my phobia in making a swiss roll, after the failed attempt years back. Definitely will be baking more swiss rolls in future as this sponge cake is really soft and spongy. A good recipe goes a long way. 

I also uploaded the photo of the freshly baked sponge cake during the cooling session (before rolling up). For the filling, I used whipping cream and lychees as I couldn't find ripe and sweet mangoes during this season. With the light whipped cream and the nice aroma from the lychees, this cake is very refreshing.
