Rosti Potato Mini Tarts 
Prepared these bite-size rosti potato mini tarts for family outing with my in-laws - picnic at the beach.
Mixed and match the recipes and ended up with a sweet tart crust with salty filling and buttery rosti potato.
Each individual portion - tart, filling & rosti potato is nice. But when they are put together, it just doesn't click. The sweet tart crust just doesn't blend well with the filling and the rosti potato which are salty.
Didn't expect the tart crust to turn out to be so sweet.. another lesson learnt.. never use the tart crust recipe that is meant for egg tart :p
However, the filling and the rosti potato do taste good as I gave a lot of different texture to the filling whereas the rosti potato is buttery and nice.
If the tart crust is more towards the salty side, this bite-size mini tarts will be a great success.
Actually planned to make a big batch as I prepared a big batch of tart dough. However, moulding the tart dough onto each tart cup mould was soooo super tiring that I gave up after moulding 24 mini tarts. What a blessing in disguise! Haha..
At least the rest of the tart dough which is currently kept in my freezer for later use.. I can use them to make cheese tarts, fruit tarts, egg tarts, cookies, etc..
